Why haven't you heard of Sous Vide cooking more in the normal world, well much of it has to do with it being a part of higher-end restaurants. This means a majority of people actually have never encountered a Sous Vide machine before, I know that I hadn't until my wife purchased ours which changed my preparation of steak forever!

Sous Vide is a method of cooking using low-temperature water bathed cooking which allows even tougher steak cuts to get cooked in a way that leaves them mouth melting. What you do is you build the cooking area, which some use plastic containers or other larger size container and you mount your Sous Vide.
Once the kitchen gear is setup you turn on the Sous Vide and set a temperature that you want it to maintain the water at. Once set it will maintain this temperature in the water from this point until you are completed cooking, which makes overcooking almost impossible.
Since Sous Vide uses meats and containers which are airtight this keeps in the flavors and prevents the foods from drying out. The term, Sous Vide, actually means "under vacuum" in French.
This refers to the process of vacuum-sealing the food in a bag, then cooking it to a very precise temperature inside a water bath. This cooking method produces near-impossible results to achieve through any other cooking method.
This is where the serious benefits come from a Sous Vide, since you are cooking low and slow you can buy tougher cuts of beef or other meat which will become mouth-melting over time. These meats can save you a tremendous amount of money and allow you to eat more for less, along with the ability to buy bulk packages of steaks.

I personally love this way of cooking and have expanded into making egg bites, similar to Starbucks, but much better ingredients like ham, egg, and bacon. I love to toss a few steaks in and be able to eat one and save one for the next day at work, nothing like an almost infallible cooking system!
